It’s incredible that crispy golden chicken can be made without using any oil at all, much alone how rapidly it can be done with an air fryer! There’s no need to turn on the oven or create a big mess on the burner since this chicken parm tastes just as excellent as the classic version with a lot less work.

INGREDIENTS

  • 2 large boneless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1/3 c. all-purpose flour
  • 2 large eggs
  • 1 c. panko bread crumbs
  • 1/4 c. freshly grated Parmesan
  • 1 tsp. dried oregano
  • 1/2 tsp. garlic powder
  • 1/2 tsp. crushed red pepper flakes
  • 1 c. marinara sauce
  • 1 c. shredded mozzarella
  • Freshly chopped parsley, for garnish

DIRECTIONS

  • Butterfly the chicken by cutting it in half widthwise to get four thin pieces. Season with salt and pepper on both sides
  • Prepare the dredging station by placing flour in a shallow basin and seasoning generously with salt and pepper. In a separate dish, beat the eggs until smooth. Combine bread crumbs, Parmesan, oregano, garlic powder, and red pepper flakes in a third bowl.
  • Coat one piece of chicken at a time in flour and shake off excess, then dip in eggs, then press into the panko mixture, ensuring sure all sides are well covered.
  • Add chicken to the air fryer basket in a single layer, working in batches if required, and cook at 400° for 5 minutes on each side. Top chicken with sauce and mozzarella and bake at 400° for 3 minutes, or until cheese is melted and golden.
  • Before serving, garnish with parsley.
