  • One teaspoon baking soda
  • 6 1/2 cups of

  • 1 cup and two tablespoons of lightly roasted tahini
  • Four cloves of crushed garlic
  • Four tablespoons of freshly squeezed lemon juice
  • Extra virgin olive oil (preferable and optional)

Preparation

To prepare Sami Tamimi’s Basic Hummus, it is necessary first to put the chickpeas in a large container and cover them with at least twice the volume of cold water a day before. Let the chickpeas soak overnight and drain them the next day. After that, place a medium saucepan on high heat and add the chickpeas and baking soda.

Cook for about three minutes, and keep stirring them constantly. Then add water and bring it to a boil. After the water is boiled, let the chickpeas cook by themselves. If you find foam and skin floating on the surface, you should remove them immediately. You should give the chickpeas at least 20-40 minutes on average. If the chickpeas are not fresh or are soaked improperly, the cooking time may be longer.

So, if your chickpeas take more than 20-40 minutes, don’t worry. If your fingers feel the softness of the chickpeas, or when you press your fingers, the chickpeas are easily squeezed between your fingers, which means that the chickpeas are almost entirely cooked. Drain the chickpeas again and put them in the grinder. Make sure to keep grinding the chickpeas until you find a thick, tough paste.

When done, add the roasted tahini paste, lemon juice, crushed garlic, and 1/2 teaspoon of salt. You can also change the measured value of salt according to your taste.
